In most public schools, the cafeteria food that is served is often over-processed and not optimized for the nutrition of the students. School foods are often high in refined carbohydrates, resulting in energy spikes and crashes, which are not conducive to optimal learning. Andrea Strong is the founder of the New York City Healthy School Food Alliance, and she has fought for years to bring healthier foods into schools so children can learn the benefits of nutrition and be set up for optimal health.
